Fonab Castle hotel in Pitlochry has launched a new restaurant concept named 1892 Grill.
The five-star hotel, which forms part of the Crerar Hotels Collection, updated the dining room and menus under the direction of executive head chef Paul Tyrrell.
The business installed a Spanish Josper grill and two meat-ageing fridges to support the launch.
The restaurant overlooks Loch Faskally and has appointed John Gilmour Butchers as its official meat supplier. The third-generation firm will provide seasonal cuts and rare-breed selections for the venue.
Tyrrell said: “I pride myself on working with the very best suppliers in Scotland and being able to tell our guests exactly where our produce comes from whilst knowing that the utmost care has gone into the process.
“Therefore, we’re really excited about this concept and our partnership with John Gilmour Butchers. I’m looking forward to showcasing the best Scotland has to offer and I think we’ve really pushed the boundaries in what can be done, especially thanks to our new Josper grill which will transform how we bring these dishes to life.”
He added: “We’ve worked really closely with Daniel and the team at John Gilmour Butchers, allowing them to guide me when I was designing the new menu. Their expert knowledge and enthusiasm for seasonal and peak products really allows me to put the very best ingredients in front of our guests.
“This new concept really shows how much we respect our local suppliers – they really are the best in the world, and we cannot wait to share these experiences with our guests, showcasing the very best Scotland has to offer.”
