Sticks’n’Sushi is set to open its first Midlands restaurant at Birmingham’s Three Chamberlain Square this autumn. 

The 250-cover restaurant will join the £1.2bn Paradise Birmingham development, occupying a ground-floor space with an adjoining terrace. The opening will create 60 jobs in the local area.

Danish architects OEO Studio designed the restaurant to combine Danish design with Japanese references through the use of timber. The interiors will feature a warm material palette with rich tones to create the dining space.

Guests can choose from sharing dishes of sushi, sashimi, salads and grilled sticks. The menu also includes beef tataki, miso-glazed black cod and lamb with garlic butter.

The drinks list will feature sake, Japanese teas, cocktails, spirits and beer, including a rice lager created with Danish brewery Mikkeller.

Brothers Jens and Kim Rahbek, and Thor Anderson, founded the company in Copenhagen, and the group now operates sites across Denmark, Germany and the UK.

CEO Andreas Karlsson said: “Regional expansion continues to be a real focus for Sticks’n’Sushi, and Birmingham feels like a natural next step for the brand. Paradise is one of the city’s most exciting developments, and we’re looking forward to bringing our blend of Danish design, Japanese dining and generous hospitality to the Midlands for the first time.”
