Jamie Younger is set to open The Victory on 26 May in East Dulwich following a full refurbishment of the site.  

The site, formerly known as Franklins, will return to the building’s original name upon its reopening. 

Younger, who previously established The Palmerston in the same area, will manage the site alongside his wife Rema Waterhouse.

Executive chef Seán Breen will lead the kitchen. Breen previously worked at Noble Rot and began his career 14 years ago under Younger at Peckham restaurant The Begging Bowl.

The menu focuses on British ingredients with a modern French bistro influence. Starters begin at £9 and include Bayonne ham with celeriac remoulade and salsify fritters with Comté.

Main courses start from £19. Dishes include poached sea trout with dill beurre blanc and sauté veal sweetbreads Grenobloise. A roast poulet jaune will be a permanent menu fixture.

The 110-capacity venue features a 70-seat downstairs dining room and space for 40 in the bar. Interiors include a zinc bar top, porcelain lighting, and antique mirrors.

A dedicated martini menu will feature alongside a wine list focusing on French regional classics. 

Booking lines for the restaurant are scheduled to open on 11 May.
